Coffee + Friends = LOVE

This Month's Recipe comes from a lovely Client + Friend, Melinda Johnson.  Since purchasing their home the Johnson's have remodeled their bathrooms and added a laundry/mudroom combo.  Amazing.  Looks beautiful.  
After touring the newly renovated areas Melinda served a lovely breakfast: chamay coffee, petite pumpkin muffins, petite Green Chile Quiche & fruit.   
Green Chile Crustless Quiche
Green Chile Quiche

1/4 cup butter (4 tbsp)
5 eggs
4 oz diced green chiles
1 cup cottage cheese
8 oz jack cheese
1/2 tsp baking powder
1/4 cup flour

Melt butter, cool butter before adding to eggs.  Beat eggs, add:  green chiles, cottage cheese, jack cheese.  Blend well.  Add baking powder and flour.  Blend well.  Pour in buttered/oil sparyed 8" square or round pie pan.  Bake at 350F for 45 minutes.  Divine!

*optional...I added a hand full for broken tortilla chips right before baking.

A Family Summer Lunch

Every Summer I think to myself  'grill/cook outdoors & concentrate on minimal to no cook meals indoor'.    I'm off to a good start.  We have been grilling more than ever on the Memphis Wood Fire Grill (my esposo, Dave, acquires new dealers for this company). The more meals that can be prepared outdoors the better.  Dave will grill on Sundays the protein that we will be eating the next 3-4 days.

First time to entertain with all cold foods.  I loved it!

A Family Summer Lunch.  Guest of Honor:  Tia Rosita, El Paso, TX.  Dave grilled two whole chickens seasoned with a Himalayan Salt Rub, once cooled I deboned them and made 2 chicken salads. One regular chicken salad the other with cranberries.  A cold lunch was divine for a hot summer day.

Cesar Salad
Hummus + Pita
Cranberry + Walnut Chicken Salad
Walnut Chicken Salad
Boiled Egg Halves
Veggie Platter: Tzatziki, Baby Carrots, Cucumber Slices, Fig Halves
A Lovely Summer Lunch
 Darlene's Chicken Salad
1 pound of chicken (deboned, no skin or chicken breast)
1/4 cup of mayonnaise (less or more to taste)
1 cup of toasted walnuts (pounded to small bits)
1/4 cup of red onion, fine dice
1/4 cup celery, fine dice
1 tsp of finely chopped fresh rosemary
1/4 cup chopped fresh parsley
black pepper to taste

Sometimes I add the chicken to the food processor for a spreadable type of I just chop up the chicken for a chunky type.  Make it to suit your mood.
Process or chop the chicken, add mayo, mix/blend well.  Add chicken mixture to bowl, add the remaining ingredients and gently fold in till well mixed.
At this point you can add a variety of ingredients.  My favorites:  grapes, cranberries, lavender, raisins....

Great as:   a dip if you use the food processor, lettuce wraps, sandwiches, picnics, snacks etc.....

What I'm Loving!

I love luxury towels.  I was once the Lands End white towels kind of gal.  For  years.  Beautiful upon receiving them, then after a few months they turn off white.  Then you buy new ones...never ending cycle.

4 years ago I bought 3 Turkish towels for the pool season.  I loved that they were so absorbent and dried in the wind in minutes.  Always ready to absorb the last pool dip.   Everyone at home seemed to love them, so I asked Dave and Carmella if they would like to use them year round.  Yes!  Yes!  Was the response.  I donated all my white heavy towels and switched to Turkish towels.  It's been 3 years now and we still love them.  You can wash 10 at time and they dry in minutes.  The colors are still vibrant.  Love them.
